Lamb chops

This recipe is very simple to make. Anyone can do it. But you will love it. … I buy my lamb chops form Costco. Good deal. They come in a package of 10 pieces - sometimes 12.

Ingredients - serves 5 good eaters - or my kids

  • 10 lamb chops - 2 for each person

  • 2 TBS avocado oil - or any cooking oil with high flame point

  • a dash of salt and pepper or just Old Bay (my to-go spice when I am lazy). Old Bay is good!

Directions

  1. Rub the lamb chops with Old Bay generously or use your favorite rub. Or just salt and pepper. Do whatever makes you happy. It’s your world

  2. Put in the fridge for one hour. If you’re short on time, just go ahead and start cooking. It’ll still be delicious. I promise you.

  3. Heat up the oil in a skillet - bring it to a temperature of about 365 deg. F. (I use cast iron - but whatever you have available to you)

  4. Brown your chops for a few minutes an each side, and around the edges

  5. You want to caramelize the meat, but not burn it. This caramelization reaction is what makes them so tender and delicious.

  6. Once caramelized on all sides - this process takes about 10 - 15 minutes max

  7. Heat up your oven to 350 deg. F

  8. Keep lamb chops in the same skillet and place in the oven on the middle rack for 10 minutes. The meat will be medium rare, a little pink but hardly any blood. Cook more or less to your likeness of how done you want it to be

  9. Take them out and let them cool down so the meat can rest for another 10-15 minutes

  10. Serve and enjoy. They are awesome without any gravy - but it’s your world :-)

  11. On the side, I typically make rice or potatoes and some vegetable like Brussels Sprouts (one of my favorite vegetables) or Asparagus. I will make another post on how to make amazing Brussels Sprouts
